Turkish-Style Hard Boiled Eggs with Guacamole Toast

The Eggs
I used to scramble my eggs in the morning. I watched a show about how Julia Child went from being a French cookbook author to the pioneer of cooking for TV. In one episode, she made a French omelet. I didn’t know this, but to cook a French omelet you need one tablespoon of butter. Julia heavily emphasized butter to prevent your eggs from sticking to the pan and for the flavor, both of which are true.
Sometimes I like to add goat cheese or top it with pecorino romano cheese. Most mornings, I don’t have time for that. So lately I’ve been making hard boiled eggs. I mean hard boiled—cooked through, all the way done. I know I might be in the minority on this, but I am not a fan of the uncooked yolk.
Guacamole and Toast
Personally, I think avocado toast isn’t appealing. The avocado is too bland by itself, and toast is toast. I know some people like to add toppings to their avocado toast, but I just make guacamole. It’s easier, and it makes sense to me.
If it’s just for me, I like to add a grated clove of garlic, cilantro, onions, and pickled jalapeño juice. If I’m making it for me and my son, it’s just onions and cilantro. But no matter what—no matter what—I will always add at least the juice of half a lime, and more if needed. Salt to taste.
As for the toast, I have PCOS, so I make it a point to avoid processed grains or bread. Instead, I’ve been eating Ezekiel bread every morning with my guacamole, and honestly it’s an acquired taste. The texture is also something to get used to. If you’re not used to it, it’ll take some time, but that’s with everything.
You could totally try sourdough or whatever suits you. But if you decide to try Ezekiel bread, I recommend toasting it in a frying pan. In general, toasting your bread in a frying pan gives you better toast. You can spread the butter on before toasting it so that you get an even distribution, and the bread isn’t as hard because the fat in the butter gives it some moisture.
Of course, for structure, do what you have to, but at some point you should try making toast in the pan if you haven’t already. If you don’t have spreadable butter, you can melt your butter in the pan before toasting.
“Turkish Egg” Sauce
I don’t know what made me think to put this on my hard boiled eggs. I can’t even say that I know the exact recipe for this I just add what I think would be good, and it really elevated my eggs.
I melt one tablespoon of butter in a pan (but you can microwave it). Once it’s melted, I add onion powder, garlic powder, and smoked paprika for the color. Then I spoon it over my eggs, and that’s it.
This is so good, but it’s also indulgent and totally optional. You can still have a filling breakfast without it, or with whatever topping you choose. However, if you have the time, I highly recommend the sauce.
